The Magnificence of Roquefort with Quince Paste
Please find my supersonic and multifaceted dish which can be an aperitif, a starter, or a dessert! And adored by everyone obviously!
From the region of Roquefort-sur-Soulzon in my cherished Southern France, Roquefort cheese has an illustrious history that spans centuries. Legend has it that the cheese was discovered by a young shepherd who, after enjoying his meal of bread and ewe’s milk cheese, was captivated by the sight of a beautiful maiden. He hastily left his lunch in a nearby cave, only to return several months later to find his cheese transformed into the exquisite mold-veined delight we now know as Roquefort. This accidental aging process, fostered by the natural limestone caves of the region, resulted in the creation of a cheese with a distinctively tangy, and creamy taste.
The Magic of Quince Paste
Complementing the assertive character of Roquefort, quince paste adds a touch of “je ne sais quoi” to this combination. Quinces, with their unique fragrance are known as the “golden apples” of mythology. Their transformation into a luscious paste involves a careful process of slow cooking, resulting in an amber-coloured delicacy that perfectly balances the cheese’s piquancy.
Domaine Weinbach Pinot Gris Altenbourg
I recommend pairing this lovely aperitif dish with the Domaine Weinbach Pinot Gris Altenbourg, a white wine from the charming region of Alsace.
This nectar of the vine, revered for its opulence and grace, showcases a marriage of richness and sweetness reminiscent of a Vendange Tardive.
Succulence and Zesty Balance
Described as a succulent white wine, Domaine Weinbach Pinot Gris Altenbourg possesses a delicate fleshiness and medium-bodied texture. Its profile is further enhanced by a lovely zesty edge, which gracefully interacts with the mouthwatering acidity that perfectly balances the nuances of taste.
A Masterful Blend of Tradition and Innovation
Domaine Weinbach holds a steadfast commitment to both organic and biodynamic practices with estate varietals that include Riesling, Muscat, Pinot Gris, and Gewurztraminer, Domaine Weinbach showcases the remarkable diversity and resourceful of Alsace’s terroir.
The tasting notes of the wine reveal the sublime hint of caramel apple. The notes of mango chutney transport the senses to exotic realms…
A Heritage of Excellence
Founded in 1612 by Capuchin monks, the venerable winery of Domaine Weinbach has traversed time, passing through the hands of the Faller family for generations.
