COURGETTE AND ROQUEFORT FLAN
A Creamy, easy and delicious courgette and roquefort flan that will leave your taste buds begging for more.
When blue cheese meets custard, normaly, culinary magic happens…
Roquefort (one of my fav French cheese), is a type of blue cheese that is made from sheep’s milk and aged in natural caves. It is known for its distinct tangy and pungent taste, making it the perfect ingredient for a savoury flan. The Roquefort cheese is paired with a custard base made from eggs, cream, and milk to create a lovely creamy texture. To add a touch of freshness and vegetal notes, courgettes are added to the mixture. The courgettes are diced and sautéed before being added to the flan, adding a subtle sweetness to balance the tangy Roquefort.
This dish is perfect for a dinner party or special occasion, as it is a true showcase of my French culinary heritage. The flan is a classic French “plat” that dates back to the Middle Ages, and Roquefort cheese has been made in the same region of France for over a thousand years. The courgettes, also known as zucchini, are a versatile vegetable that has been used in French cuisine for centuries…
Roquefort: the cheese of kings and the king of cheeses
When it comes to presentation, the Roquefort and courgettes flan can be garnished with a sprinkle of chopped herbs such as chives or parsley, or a drizzle of balsamic reduction for added depth of aroma. It can also be served with a simple green salad or roasted vegetables, to balance out the richness of the flan.
Rosé all day (and night) with my Roquefort flan and Cabardès pairing
Cabardès (Rosé wine) from Languedoc-Roussillon, is a terroir on the stony slopes of the Montagne Noire, where there is a harmonious balance between the east and west. It is not just any ordinary wine, it’s a wine with a bit of a wild streak. The area is home to a wide variety of grape varietals, and winemakers here have always been known for their experimentation and willingness to take risks.
Cabardès wine is a perfect example of this experimentation. It is here that both Merlot and Cabernet (for the Atlantic side), and Syrah and Grenache (for the Mediterranean one) grow alongside each other. The wine is known for its unique and complex profile, which is why it’s a perfect match for my Roquefort and courgettes flan. The wine’s acidity and subtle sweetness perfectly balance the tangy and pungent hint of the Roquefort cheese and the subtle sweetness of the courgettes.
The wine region of Cabardes is named after the Lords of Cabaret, who is credited with defending the Chateaux de Lastours against Simon de Montfort in 1209. Despite its long and rich history, the Cabardès wine region is one of France’s youngest appellations.
Winemakers in the Languedoc-Roussillon region have rediscovered the unique potential of this wine and have started to produce it in small quantities.
In fine
So, next time you raise a glass of a rosé Cabardès, remember that you’re not just drinking a wine, you’re drinking a piece of history. A history that’s a bit rough around the edges, but always full of character. Cheers!
