CAMEMBERT AND PEAR SALAD
Enjoy my easy-peasy salad where the Camembert unfolds its creamy tales, intertwining with the perfection of pears…
Camembert and Pear composition
Sometimes, there are days when inspiration strikes effortlessly, even on those occasions when cooking feels like an unavoidable task. It is the serendipity of exploring your fridge that unravels a surprise, a recipe waiting to be born from the ingredients that patiently await their moment in the spotlight.
As a French food blogger residing in the city of London, my Camembert and pear salad may pay homage to the fusion of my cultural roots and my current home. This salad seamlessly blends the rustic charm of Camembert, a quintessentially French cheese, with the crisp sweetness of pears.
The Camembert Chronicles
Marie Harel, a pioneering farmer from Normandy, is renowned as the mastermind behind the inception of the original Camembert cheese in 1791. While the precise details of her cheese-making journey are shrouded in historical ambiguity, a widely embraced narrative attributes the creation of this delectable delicacy to a recipe gifted by a priest from Brie. This treasured recipe was skilfully adapted by Marie Harel to harmonize with the rich cheesemaking traditions of her region.
Though historical records do not explicitly validate the Harel family’s account, the prevailing belief underscores Marie Harel’s pivotal contribution to the evolution of Camembert. The cheese garnered widespread acclaim during the late 19th century, coinciding with the advent of industrial processing techniques. However, it was not until the tumultuous era of World War I that Camembert achieved its zenith of popularity, earning a coveted place in official war rations.
Today, Camembert stands as an emblem, celebrated for its luscious snowy-white rind, velvety texture, and indulgent buttery flavour. This iconic bloomy rind cheese has transcended its origins, inspiring countless regional variations worldwide.
Wine Pairing
To complement my salad of camembert and pear, I propose to you a red Epineuil from Burgundy.
This distinguished locale, situated just northeast of Chablis, produces of primarily red wines crafted from the noble Pinot Noir grape, each bottle carrying the imprint of its unique terroir.
Epineuil’s Limestone
The vineyards of Epineuil, draped across limestone-rich soils akin to those in Chablis, contribute to the region’s vinous identity. The wines, heralded for their fresh and steely character, showcase the influence of this distinct terroir. Notably, the inclusion of the local grape variety, César.
Tasting the Terroir
The wines are described as a light counterpart to Chablis. Delicate floral violet notes alongside a subtle wisp of tannin, while pronounced mineral characteristics define the wine’s identity. The tasting journey takes enthusiasts through aromas of red and black fruits, interwoven with earthy and mineral nuances, culminating in a light, clean, and racy profile. Cranberries and pomegranate further embellish this vinous sonata.
Revival and Resilience
The history of Bourgogne Epineuil wine narrates a tale of resilience and revival, echoing back to the late 1970s. The vineyards, once ravaged by the notorious phylloxera, rose from the ashes, spearheading a comeback that has defined the viticultural landscape of the Yonne department in northern Burgundy. This resurgence, marked by a meticulous selection of terroirs and grape varieties, has solidified Bourgogne Epineuil’s status as a revered appellation, offering wines that mirror the rich history and enduring spirit of this Burgundian gem.
