It is easy-peasy to make and requires only a few simple ingredients that I always have on hand. The tuna and gruyere cake is also very versatile, making it a great accompaniment to any nice salad with a mustard dressing for example. It is the perfect solution for those lunch or supper dilemmas when you need a quick and delicious meal.

A cake that Brings Back Memories

This tuna and gruyere cake holds a special place in my heart, as the recipe has been passed down from my mother. This cake has been enjoyed by my family since my childhood and is still make by my own children today…

The Abymes Title: A Mark of Distinction for Savoie’s White Wines

To complete the culinary experience, I recommend pairing this cake with a white wine from the Savoy & Bugey.

The Abymes title is one of the highest honours a still white wine can receive. This coveted distinction is reserved only for the lightest and driest white wines, which are prized for their herbaceous notes and refreshing finish.

A Rich History of Viticulture in Savoie-Bugey

The vineyards of Savoie-Bugey have a long and storied history dating back to the 1st century BC. During the Middle Ages, monks played a pivotal role in the development of viticulture in the region, conducting experiments in grape growing and winemaking on slopes as high as 1,000 meters.

The Grape Harvest Ban of 1559 : A Turning Point for Savoie’s Wines

In 1559, Duke Emmanuel Philibert issued an edict banning the grape harvest in order to allow grapes to ripen fully on the vine. This measure proved instrumental in preserving the quality of the wines produced in the region.

Overcoming Adversity: Revitalizing Savoie’s Vineyards After Phylloxera

The arrival of phylloxera in the late 19th century dealt a severe blow to the Savoyard vineyards, causing widespread devastation. But thanks to a concerted effort to replant and the discovery of grafting techniques using American rootstock, the region’s vineyards have managed to recover.

Savoie-Bugey Wines: for the Senses

The wines of Savoie-Bugey are known for their light tannins, spicy and fruity notes, and rich aromas. Whites, crafted primarily from the Jacquère grape variety, are dry and aromatic with a satisfying complexity. Its pale golden colour and floral nose lead to a palate that is both tangy and chalky, with a bright citrus finish.

Overall, the story of Savoie-Bugey’s vineyards is one of resilience and ingenuity, resulting in wines that are a true testament to the region’s terroir and winemaking traditions. The Abymes white wine is a perfect example of the excellence that can be found in this beautiful corner of France, and its light and refreshing taste makes it a perfect match for my tuna and gruyere cake, my go-to on busy days, and I hope it becomes yours too. Enjoy!
