Fear not, for I am here to be your culinary saviour with a delicious cupboard recipe : the macedoine and tuna cake!
Macedoine: More Than a Geographical Neighbour to Albania
Beyond its geographical proximity to Albania, the term “macedoine” in the cookery realm takes on a whole new meaning. In France, it refers to a mixture of minced vegetables, a versatile canvas eagerly embraced in kitchens across the country. Often found in tins or as a frozen convenience, macedoine becomes a saving grace when coaxing vegetables into the diets of most little eaters. It is a kitchen ally, a time-saver, and a secret weapon against vegetable resistance.
The term “macedonia” was popularized in the middle of the 18th century to refer to mixed fruit salad, possibly alluding to the diverse origin of the people of Alexander’s Macedonian Empire!
Now, imagine this pantry superhero, the macedoine, joining forces with the ocean’s bounty : tuna. Shaped into a cake, this dish becomes a universal crowd-pleaser, loved by the young and the young at heart.
Wine pairing
For my macedoine and tuna cake fiesta, I recommend Court-Cheverny, a white wine originating from the Loire Valley, is renowned for its unique production from the rare Romorantin grape variety. This wine, hailing from the Cheverny appellation, is distinguished by its fresh and floral taste, marked by crisp acidity and sleek precise flavours.
Aromatic Alchemy
With a pale yellow to occasionally golden appearance, Court-Cheverny captivates both the eyes and the palate. Aromas of apple, pear, and acacia flowers dominate the nose, with aging introducing notes of honey, lemon, and beeswax. The wine is delicately herbal, showcasing an acidic minerality that contributes to its quality and length. Its lively and fine taste unfolds with flavors of exotic fruit and citrus notes typical of the Sauvignon variety.
Journey Through Time
The history of Court-Cheverny is deeply intertwined with the winemaking heritage of the Loire Valley. The Cheverny appellation, where this wine is produced, has a storied past dating back to the Middle Ages, with vineyards initially established around abbeys. The 16th century brought recognition to the region’s wines, leading to a law prohibiting Parisians from purchasing wines produced within twenty leagues of the capital in 1577.
