WHOLEMEAL PASTA WITH REBLOCHON GRATIN

Dive into my irresistible and easy-peasy wholemeal pasta recipe with reblochon gratin :

a taste worth traveling for!

A Nostalgic Culinary Journey

As a devoted food enthusiast with a French heart beating in London, my love affair with the exquisite Reblochon cheese runs deep. This rich and creamy gem, often associated with the cozy warmth of a tartiflette, holds a special place in my culinary repertoire. Each bite of the gooey goodness takes me back to the snowy landscapes of my childhood, where the reward of indulging in Reblochon by the fireplace was a cherished memory.

A Tale of Tartiflette and Skiing Adventures

Growing up, skiing trips were a cherished tradition, and the aroma of melting Reblochon was an integral part of those experiences. The traditional French dish, tartiflette, laden with potatoes, lardons, crème fraiche, and the star of the show, Reblochon cheese, became a symbol of comfort and celebration.

Wholemeal Pasta: A Twist on Tradition

In the spirit of sharing the joy of Reblochon beyond the boundaries of tartiflette, I present to you a delightful creation : wholemeal pasta with reblochon gratin. This dish is a departure from tradition, infusing the beloved cheese into a pasta gratin that promises to be terribly yummy!

Exploring the Mondeuse Grape

For my wholemeal pasta with reblochon gratin, I recommend an Arbin red wine from Savoy & Bugey.

The Mondeuse grape variety reigns supreme, casting its bluish-toned allure. Notably, Mondeuse d’Arbin emerges as a distinguished red wine, boasting an intense deep red hue.

Situated among the “Vin de Savoie” villages, the Arbin appellation stands out as a gem distributed across Haute-Savoie, Ain, Isère, and Savoie. Unlike generic “Vin de Savoie,” wines bearing the Arbin appellation hail specifically from this charming village, with notable companions in Apremont, Chignin, Chautagne, and more.

Tasting Vin de Savoie Arbin

Delve into the glass, and Arbin reveals intricate aromas of blackberry and black raspberry. Notes of spices, fur, and nutmeg dance in harmony, while hints of violet and a mineral backbone elevate the experience. The palate, rich and intense, may even unveil subtle notes reminiscent of marshmallows, adding a delightful twist.

A Journey Through Time

Travel back to the 18th century, where Arbin’s vinous tale began as a hamlet under Montmélian’s wing, known as “Pagus arbinensis.” Nestled in the southernmost reaches of the Vin de Savoie appellation, Arbin finds its identity in the unique soils of clay and limestone, adorned with dark scree. These soils prove instrumental to the Mondeuse grape, the exclusive protagonist in Arbin wines.

Traditionally, red wines from Arbin mirrored their alpine origin, light and fruity. However, contemporary wine trends witness a fascinating shift. Increasingly, Arbin wines are embracing a vinification style that leans towards richness and heaviness, adding a modern chapter to the vinous legacy of this southern crus.

So, cheers to creating new memories with a plate full of warmth wholemeal pasta with reblochon cheese and nostalgia!
