SALMON WITH COLOMBO SPICE

Gather your loved ones and embark on a scrumptious adventure with my so easy-peasy salmon and colombo spice!

The Charms of Salmon with Colombo Spice

Today, I present to you a simple yet remarkably healthy recipe featuring salmon infused with the mouthwatering  Colombo spice. This lovely dish can easily be adapted to incorporate poultry if you prefer.

The marriage of the Colombo spice with the succulent flesh of salmon is a gem especially when global culinary traditions intertwine.

Untwist the Origins

To truly appreciate the culinary heritage behind my salmon with Colombo spice, a brief sojourn into history is warranted 😊

Colombo spice, traces its roots back to the Sri Lankan emigrants who ventured to the French West Indies as industrious plantation workers. Named after the resplendent capital city of Sri Lanka, Colombo, this fragrant spice blend has become an integral component of the renowned dish known as chicken Colombo, a sumptuous, velvety stew.

Journey of Sensations

At the heart of Colombo powder lie the distinguished quartet of coriander, chiles, garlic, and turmeric, each playing a pivotal role in bestowing the mixture with its distinctive character. While akin to curry powder in essence, Colombo spice possesses an added dimension of complexity, its composition enriched by the inclusion of roasted uncooked rice. This addition not only imparts a captivating nuttiness to the blend but also assumes the role of a natural thickening agent during the cooking process, rendering it a splendid choice for creating luscious soups and stews.

Primarily celebrated in the enclaves of the French West Indies, including Guadeloupe, Martinique, St. Martin, and Saint Barthélemy, as well as the smaller islands of Les Saintes, Marie-Galante, and La Désirade, Colombo powder envelops these regions with its enchanting aroma. However, it is important to recognize that its origins lie deeply rooted in Indian culinary traditions, subsequently finding its way into Jamaican and Trinidadian recipes.

Mâcon Milly-Lamartine, through Burgundy’s Mâconnais Region

It’s in the picturesque landscapes of Burgundy’s revered Mâconnais region, that Mâcon Milly-Lamartine stands. Crafted exclusively from the noble Chardonnay grapes, meticulously cultivated on limestone-laden soils, this white wine embodies the terroir-driven elegance that defines the region.

Gently cascading into the glass, Mâcon Milly-Lamartine unveils a resplendent golden yellow hue, captivating the beholder with its radiant brilliance. As one ventures closer, an alluring bouquet with delicate notes of gunflint is revealed. It is within this intricately woven aroma that the true essence of this wine is revealed.

An Expression of Timelessness

Upon the palate, the dance commences, gracefully intertwining the zesty freshness of citrus, most notably lemon, with the enticing allure of fresh pineapple. Mâcon Milly-Lamartine epitomizes the spirit of a fun, fruit-driven Chardonnay.

Enjoyment Now and in the Years to Come

While Mâcon Milly-Lamartine captures the essence of Burgundy’s Mâconnais region in its youthfulness, it is a wine that invites exploration and appreciation throughout its evolution. Enjoying its finesse now offers an unparalleled pleasure, but for those who possess the patience, this wine reveals further nuances with up to five years of careful cellaring.

A Terroir with Altitude

Situated at elevations ranging from approximately 290 to 380 meters, these vineyards are blessed with gentle slopes that embrace the caress of the rising sun. It is in this harmonious marriage of terroir and elevation that the Chardonnay grapes find their home, imbuing the wine with a sense of distinctive place.

Mâcon Milly-Lamartine delights in its ability to intricately weave the nuances of citrus into its tasting experience. With no fewer than 27 mentions of citrus notes, including the vibrant zest of lemon…

As I bid adieu to this delectable journey, may you find inspiration to embark upon your own culinary adventures, embracing the spirit of experimentation and sharing the joys of effortless cooking with your family and friends…
