QUATRE-QUARTS BRETON (POUND CAKE)

Have you ever tried a quatre-quarts cake from Brittany? A delicious ode to timeless French cooking tradition!

Capturing Brittany in every bite

Imagine a cake that, with each bite, encapsulates the very essence of my beloved France. That is precisely what the quatre-quarts cake offers, an edible journey through the heart of French tradition. Enter the Quatre-Quarts, a French rendition of the pound cake, where precision meets simplicity. The name itself, translating to “four-fourths,” reflects the harmonious balance achieved by combining equal parts of eggs, flour, butter, and sugar. Bake it for tea, and you will soon find yourself immersed in the flavours that have graced French tables for centuries.

The Origin of Pound Cake

Traditionally, pound cakes are crafted using a pound of each of the four essential ingredients: flour, butter, eggs, and sugar. However, in the charming culinary landscape of Brittany, the pound cake takes on a unique twist. Instead of pounds, the French use quarts in their recipes, marking a departure from the imperial unit of pounds since the 1780s.

Breaking the Rules with a Dash of Rebellion

In my kitchen, crafting the quatre-quarts became a delightful rebellion against the traditional rules. While tradition dictates equal weights for eggs, flour, butter, and sugar, I took a slightly different path. When faced with the prospect of adding the same weight in these ingredients, especially sugar, at the 300 g mark, I dared to deviate !

From Pounds to Quarts

Reflecting on the transition from pounds to quarts, it is a culinary revolution that mirrors the historical and cultural shifts in France. As the country bid adieu to the imperial system, the kitchen became a canvas for innovation. The Quatre-Quarts, with its equal parts and balanced simplicity, embodies the spirit of change and resilience.

A Tea-Time Affair

Bake the Quatre-Quarts for tea, and you will witness more than just the magic of the oven. It is a ritual that transcends generations, weaving memories of shared moments and laughter. The aroma that wafts through the kitchen is a fragrance of tradition, a reminder that the best stories are often told over a cup of tea and a slice of cake…
