RILLETTE SARDINE ON GOUDA WAFER
Rediscover the joy of beloved childhood snacks with a gourmet twist : enjoy my succulent and easy-peasy rillette sardine on gouda wafer!
Journey down memory lane with Gouda wafers
In the world of savoury treats, there’s a little treasure from my beloved country : the delectable Gouda cheese-stuffed wafers, called “Canasta” from the Delacre branch. Each bite is a trip down memory lane, a nostalgic journey to my childhood when these wafers were a cherished treat. Time may pass, but my appetite for them remains unwavering…
As a little girl, I would devour these wafers with gusto, each crispy layer giving way to the creamy Gouda cheese within. The blend of textures left an indelible mark on my palate. It’s no wonder that I find myself drawn to them even now, enjoying the echoes of the past with every bite.
A surprising twist
One day, as I contemplated my beloved Gouda wafers, a creative spark ignited within me. Why not use these wafers as a support for something? That is when the idea of some rillettes sardine on Gouda Wafer was born.
I decided to share this culinary experiment with my family and friends when I was in the South of France, and to my delight, it became an instant hit. It was a reminder that sometimes, the most unexpected culinary marriages can yield the most delightful results.
A toast to Corsica: ‘Île-de-beauté white wine
I discovered the perfect wine pairing : an Île-de-beauté white wine from the most amazingly beautiful Corsica.
In the Mediterranean Sea, between the southeastern coast of Provence and the western shores of Tuscany, lies the beautiful island of Corsica that you must absolutely visit!!!
Corsica: The French connection
Since 1764, Corsica has been a part of the French realm, officially recognized as one of its 27 regions. However, beneath the French surface, Corsica’s heart beats with an Italian heritage that permeates its culture, including its wines.
Corsica’s Italian roots are vividly expressed in its wines, primarily crafted from Sangiovese, known locally as Nielluccio, and the enchanting Vermentino. These grape varieties form the backbone of Corsican viticulture.
Under the protective umbrella of the Île de Beauté IGP (Indication Géographique Protégée), Corsican winemakers have the freedom to embrace a rich mosaic of grape varieties. This includes a blend of traditional Corsican grapes, Spanish imports, French classics, and Italian gems. Chardonnay, introduced by the French, often dances alongside Vermentino in IGP wines.
Aromatic extravaganza
These wines are a sensory extravaganza, fully dry and aromatic. With notes reminiscent of lychee, citrus blossom, pomelo fruit, and a whisper of sea breeze, each sip transports you to Corsica’s sun-kissed shores.
Pouring a radiant yellow with delicate greenish hues, Corsican whites offer a visual treat that anticipates the pleasures of the palate. The nose is an intricate dance of citrus and white flowers, while the first sip is a burst of freshness that leads to a luscious and fruitfully acidic finish.
A heritage of viniculture
Corsican winemaking has a storied past, dating back to 570 BC when Phocean traders settled on the island, specifically in the commune of Aléria. The 18th century marked a significant turning point as Corsica became a part of France. Following Algeria’s independence from French rule, many Algerian Pieds-Noirs immigrated to Corsica, planting the seeds of vineyards that thrive to this day.
