Enjoy the extraordinary realms of appetizers with my easy-peasy duck confit rillettes, artfully crafted with a Roquefort cheese.

Duck Confit Rillettes with Roquefort Cheese

OMG! As an ardent lover of culinary indulgence from my South West, I find myself always smitten with the exquisite duck confit. Its succulent meat, perfectly preserved in its own rich juices is the best I can possibly have after a long day!

Today, I wish to share with you a unique variation, combining the heavenly notes of duck confit with the delectable Roquefort cheese in a rillettes version (or potted duck as you say in English), a recipe fit for the gods.

A Journey Through Time

The technique of confit, originating in the beautiful Gascony, dates back centuries. Initially employed as a method of preservation, it has since evolved into an art form that elevates humble ingredients to heights of taste and texture. The slow cooking process allows the duck to develop an irresistible tenderness while intensifying its natural taste.

King of Blues

Roquefort cheese, heralded as the “King of Blues,” adds a delightful tang and complexity to my rillettes. This velvety, blue-veined cheese is made from the milk of ewes grazing on the lush pastures of the Causse du Larzac. Its distinct hint profile, reminiscent of caves, blends seamlessly with the rich and robust duck confit!

With a crusty fresh bread as its accompaniment, my duck confit rillettes promises to transport you to a realm of pure gastronomic bliss.

Wine Pairing

I recommend pairing my exquisite rillettes with the Bouche-du-Rhone, a lovely red wine from my amazingly stunning Provence.

The distinguished roster includes the likes of Cabernet Sauvignon, Carignan Noir, Grenache Noir, Cinsaut, Merlot, and Syrah. Each grape variety brings its own unique character to the wine.

The Dark Glossy Red

Behold the enigma that is the Bouches-du-Rhone wine, resplendent in its dark, glossy red hue. From the moment it graces the glass with its nose of fresh fruits, elegantly dominated by red fruits. The intense bouquet unfolds like a melodic crescendo, revealing notes of cherries, raspberries, and a subtle interplay of spices. As the wine breathes, woody aromas intermingle with nuanced hints of toasted notes.

Ideal Serving Temperature

The wine unveils its perfect chorus when served at the ideal temperature, an orchestration of 14 to 16 degrees Celsius. Within this range, the wine achieves its optimal balance, allowing each note to harmonize and resonate with precision.

Ancient Vineyards

The vineyards of Bouches-du-Rhone, proudly bear the weight of history dating back to the 5th century BC. Even in those ancient days, the vine already thrived on the hallowed grounds of Marseille and Cassis, their roots entwined with the origins of viticulture. It was the Greeks who, with their discerning wisdom, introduced the vine to this fertile land, leaving an indelible mark on the vinicultural heritage of the region…
