Courgette and Mint Terrine: A Summer treat
As the weather gets warmer and the sun shines brighter, we all crave for light and refreshing dishes. And what better way to enjoy the summer breeze than with a terrine? In France we do like terrines and every family has its own recipe. I absolutely adore making this terrine : the perfect dish for any summer occasion. It is easy to realise, and you can bring it along to a picnic or serve it at a buffet. Today, I present to you a vegetarian one with courgette and mint.
A French Classic
Terrine is a classic French dish that originated in the Middle Ages. It was originally made with liver and served hot, but nowadays, it is more commonly served cold with various meats, fish, and vegetables. The term “terrine” comes from the French word for “large earthenware pot”.
My Personal Touch
I have fond memories of enjoying terrines on sunny afternoons in the South of France with my family and friends. The fresh flavors of this dish paired with tomato sauce or home made mayonnaise always captivated me. The combination of courgettes and mint creates a refreshing taste that is perfect for summer.
Exploring the Terroir of Thézac-Perricard
To complement the freshness of the terrine, I recommend a Thézac-Perricard (rosé) from the South-West.
Nestled in the verdant expanse of the South West, Thézac-Perricard is a celebrated wine region that is steeped in a rich viticultural legacy. Situated just west of Cahors, on the sun-kissed southern bank of the meandering Lot river, this small IGP designation has long been renowned for producing some of the most exquisite rosé wines in the region.
Aromas and Flavours
With a radiant pink hue that is as enticing as it is alluring, the rosé is an exquisite sensory experience. Aromas of tangy red fruits, such as redcurrant and raspberry, blend seamlessly with delicate flowery notes, creating an olfactory sensation that is at once delicate and complex. On the palate, the wines reveal a round, gourmand character that is enlivened by a lively acidity, making for a harmonious balance that is both refreshing and indulgent.
Geography and Culture
Thézac-Perricard is not just about wine, though. The region is also known for its captivating geography and rich cultural heritage. You may one day explore the rolling hills and valleys that surround the vineyards, or immerse yourself in the vibrant local traditions that have evolved over centuries. Indeed, Thézac-Perricard is a place of rare beauty and enduring allure, where wine and culture come together to create a very lovely experience…
