A Summertime Marvel: Wasabi Butter for Your Buffet Table

When it comes to entertaining guests, summertime calls for an abundance of colourful dishes. And what better way to satisfy your friends and family than with a subtle yet spicy wasabi butter?

My Love for Entertaining

In my house in the South of France, summertime is synonymous with inviting friends and family to share a lovely buffet table. The warm sunshine, blue skies and the Mediterranean breeze create the perfect setting for a delightful feast. As a French food enthusiast, I always strive to create dishes that are both delicious and visually appealing Especially after being in Japan and in love with this marvellous archipelago, it is this love for entertaining that led me to introduce you to the marvel that is wasabi butter.

Wasabi, the Japanese Delicacy

Wasabi is a popular Japanese condiment known for its pungent and spicy flavour. The bright green paste is typically served with sushi and sashimi, and is made from the rhizome of the wasabi plant. The wasabi plant is notoriously difficult to grow, making wasabi one of the most expensive spices in the world. In fact, it is often substituted with horseradish and mustard powder, which do not quite match up to the unique hint of true wasabi.

The Subtle Yet Spicy Wasabi Butter

When making garlic bread for my summertime buffet table, I had some leftover butter that I did not want to waste. It was then that I decided to experiment and created wasabi butter.

Discover the Unique Qualities of Vallée du Torgan, a White Wine from the Western Languedoc

Pairing the right wine with your dish can elevate the entire dining experience. For this wasabi butter, I recommend a white Vallée du Torgan from Languedoc-Roussillon.

Nestled amidst the hills of the western Languedoc, the IGP title of Vallée du Torgan is a region steeped in history and renowned for its distinctive wines. This small area, located under the shadow of the Pyrenees, is prized for its exceptional white wines made from the Moscatel grape variety.

The Ideal Temperature and Profile of Vallée du Torgan

To truly appreciate the unique qualities of Vallée du Torgan, it is important to serve it at the ideal temperature of between 8 and 10°C. When enjoyed at this temperature, this organic cuvée boasts crisp notes of citrus and white fruit.

The Geology and Climate of Vallée du Torgan

The hot Mediterranean climate of Vallée du Torgan, with its long summers and short, mild winters, contributes significantly to the region’s unique profile. The area’s high sunshine hours and the poor, shallow soils found in the region give rise to wines that are known for their distinctive character and complexity.

The geological history of the region has given birth to a considerable multiplicity of soil types, including schist in the north, limestone rock deposits or gravel at the foot of the mountains, and clay-limestone soils on terraces. These diverse soils play a key role in shaping the flavors and aromas of Vallée du Torgan’s wines.

A Region with a Rich History of Winemaking

The Languedoc region, of which Vallée du Torgan is a part, is one of the oldest and most storied wine-growing areas in all of France. Planted with vines by the Greeks as early as the 5th century BC and later expanded upon by the Romans, the region has a long and proud history of winemaking that is still celebrated to this day.
