TUSCAN SALMON

Super simple Tuscan salmon made with tomatoes and spinach. This healthy dish is paired with a white wine from Liguria.

A dash of Italian charm

In the world of cuisine, nothing compares to the simple yet hearty pleasure of a dish that’s both healthy and delicious. This Tuscan salmon with tomatoes and spinach recipe is no exception, and it’s a favourite in many households, including my own.

My daughter, who’s an accomplished home cook, is particularly fond of this dish. She often prepares it when I’m away on business, and I’m always impressed by how effortlessly she pulls it off. The beauty of this dish is that it’s uncomplicated, yet it packs a big punch of nutrients.

When it comes to pasta, I always recommend using fresh varieties if possible. They’re quicker to cook and have a delicate, tender texture that complements the richness of the salmon and the bright acidity of the tomatoes. I’ve used Conchiglie this time, but feel free to experiment with other pasta shapes that suit your tastes.

A salmon sensation with a side of greens

The ingredients in this recipe are straightforward and easy to find. The salmon is pan-seared to perfection and topped with juicy, ripe tomatoes and a handful of wilted spinach. The result is a beautiful balance of fragrant that come together to create a dish that’s both elegant and hearty.

This recipe is a true testament to the beauty of Tuscan cuisine. It’s a celebration of the region’s rich culinary heritage, which is known for its simple, rustic dishes that are packed with flavour. From the crisp white wines of Liguria to the bold, spicy aromas of the Tuscan countryside, this dish is a true taste of Italy.

Matching minerality: Cinque Terre and salmon

The white wine from Cinque Terre is a crisp, refreshing variety from the Liguria region of Italy, overlooking the Ligurian sea. It is known for its bright acidity and minerality, which makes it an ideal pairing for fish’s dishes, like the Tuscan salmon with tomatoes and spinach. The acidity in the wine helps to cut through the richness of the salmon, while the minerality complements the juicy sweetness of the tomatoes. Cinque Terre is a popular choice for seafood lovers and is considered a classic Italian wine. It is produced using traditional winemaking methods and is made from the Vermentino, Bosco and Albarola grapes, which are native to the Liguria region. If you’re looking for a wine that’s both approachable and versatile, Cinque Terre is a great choice.

The Tuscan treat

Whether you’re entertaining guests or simply enjoying a quiet night in with your family, this dish is sure to be a hit. So why not give it a try and see for yourself why it’s a family favourite in my household?
