My Love Affair with French Pastry

OMG, I do looooove the Saint-Honoré. This iconic French pastry has a history that traces back to around 1847 when its delightful recipe first emerged. Some say its origins may be linked to a dessert in Bordeaux, possibly even my beloved “dune blanche.” But the exact origins remain shrouded in mystery.

The Saint-Honoré Pastry

Known by various names such as the Saint-Honoré cake or gâteau St-Honoré, this quintessential French dessert that pays homage to the patron saint of bakers and pastry chefs, Saint Honoré or Honoratus.

This delectable dessert made its debut some time before 1850 at the renowned patisserie Chiboust, nestled on the historic Rue Saint-Honoré in the heart of Paris. While the exact year of its inception is often cited as 1847, the credit for this culinary masterpiece goes to Auguste Julien, a skilled baker at the Chiboust bakery.

From Brioche Ring to Cream Puff Crown

The original incarnation of the Saint-Honoré cake was a ring-shaped brioche, generously filled with pastry cream. Chiboust, ever the innovator, lightened the cream with an airy Italian meringue to create a novel filling that set hearts aflutter. But it was August Jullien, one of Chiboust’s gifted bakers, who introduced a transformative twist. He replaced the traditional ring of dough with a delicate circle of small cream puffs, giving the cake its distinctive appearance and unmatched texture.

The Modern Saint-Honoré Emerges

By the late 19th century, the Saint-Honoré cake had evolved into the form we recognize today. It boasts a pastry disk brimming with Chiboust cream, crowned with a regal array of caramelized cream puffs, and adorned with a generous dollop of whipped cream.

Throughout Paris and France, various celebrations and traditions pay homage to Saint Honoré, underscoring the cake’s significance in the world of pastry.

Today, the Saint-Honoré pastry transcends borders and remains an adored and iconic French dessert, delighting palates far and wide…

A Supersonic Twist on Tradition

As a food enthusiast I could not resist the temptation to put my own spin on this legendary treat. And so, for my Advent calendar, I decided to offer something supersonic : my version of the Saint-Honoré.

Now, you might be wondering how an intricate pastry with a rich history can be transformed into something express. Well, my friends, the magic lies in simplicity. If you’re in a hurry or simply looking for a quick yet delightful dessert, here’s the secret: grab some chouquettes a dollop of whipped cream, and, of course, a generous helping of Salidou (homemade or not, the recipe is here)!

Transitioning to Express Delight

Transitioning from the classic Saint-Honoré to an express version is like stepping into a whirlwind of flavors. Instead of painstakingly crafting each layer, I opt for the simplicity of chouquettes (recipe here), airy and delicate puffs of pastry that perfectly complement the creaminess of the dessert.

The Whipped Cream Dream

Next comes the whipped cream, light and fluffy, ready to embrace the chouquettes with its cool embrace. It’s a harmonious marriage of textures – the crispness of the chouquettes contrasting with the velvety creaminess of the whipped delight. OMG!!

So, if you find yourself in need of a quick but extraordinary dessert, remember that with chouquettes, whipped cream, and Salidou, you may enjoy the pleasure of devouring Saint-Honoré in just a few minutes. Are you ready?

Do not forget to leave a comment and let me know how it turned out! And if you have any variation of this recipe that you would like to share, I would love to hear it. Be sure to check out my other easy-peasy recipes on the blog for more culinary inspiration!
