SALAD OF SMOKED SALMON, CLEMENTINE AND ROQUEFORT
Easy, and healthy. An original wintery salad with smoked salmon, clementine and roquefort.
Embracing the Winter Magic
The enchanting time at its peak as we approach the festive season, and what better way to celebrate than with a delectable salad that harmonizes the richness of smoked salmon, the zing of clementine, and the boldness of Roquefort cheese? As I explore the culinary wonders that align with the winter chill, I have discovered a captivating combination that encapsulates the essence of the season.
Christmas Memories on a Plate
For me, this salad is a vessel of memories. The choice of clementine, reminiscent of childhood Christmases, brings a nostalgic warmth to the salad. The combination of smoked salmon and Roquefort is a nod to my French heritage, a culinary homage to the flavors that shaped my palate.
Maple Syrup Magic
To enhance the winter charm of this salad, a subtle drizzle of maple syrup adds a touch of sweetness without overpowering the ensemble. It is a culinary secret that ties the elements together, creating a cohesive and sweet experience.
A Bouquet of Nature’s Bounty
For this winter salad, I recommend a white Coteaux de l’Ardèche from the Rhone Valley.
Notes of candied lemon, citrus marmalade, acacia, and thyme intertwine with subtler hints of pear, white peach, sage, and lemon verbena.
As the elixir touches the palate, the wine unfolds its story. It is a tale of freshness, a narrative carried by a delightful tension that accompanies the flavours of candied lemon, white flowers, and a whisper of salinity. The journey concludes with a harmonious roundness.
Roots in Rugged Terrain
The Coteaux de l’Ardèche region is rugged and barren terrain, this wine region boasts a climate shaped by a Mediterranean influence, providing the ideal canvas for viticulture to thrive.
The viticultural heritage runs deep, possibly tracing its roots to indigenous vines. In the Cévennes, a subregion of the Ardèche, the native grape variety Chatus, an ancient Serine variety mentioned as far back as the 17th century, proudly stands as a symbol of the region’s vinous legacy.
Roman Echoes: The Valley of Wine
History echoes through the vineyards, reaching back to Roman times. Pliny the Younger, once described the Ardèche as the “valley of wine” over two thousand years ago. Each vine in this region carries the weight of centuries, and each bottle tells a story that transcends time.
In fine
So, as you prepare to embrace the festive season, let this salad of smoked salmon paired with clementine and Roquefort be your culinary ode to the magic of winter…
