A Tasty Adventure with Spaetzle and Rocamadour Cheese
As someone who loves food, I am always exploring new and exciting flavour combinations that are both delicious and easy to prepare. And when it comes to pasta, I have found the ideal pairing in spaetzle pasta and rocamadour cheese from my beloved hometown Lot region. This classic Alsatian noodle is a true comfort food, and I am eager to share my recipe with it for you.
From Alsace to Your Table
Spaetzle is a type of egg noodle that originates from the Alsatian regions of France. Its soft and chewy texture makes it the perfect base for various sauces, toppings, and ingredients. And, when paired with the sharp and creamy rocamadour cheese from the Lot, you get a delightful taste explosion. The cheese, made from goat’s milk perfectly balances the pasta’s softness.
In my opinion (and as well from my friends), spaetzle goes particularly well with cooked cheese as it melts in just the right way. The cheese perfectly coats each noodle, creating a harmonious mixture of taste and textures.
Making Memories with Spaetzle and Rocamadour Cheese
Spaetzle with rocamadour cheese is not only a delicious pasta recipe, but it’s also a personal favourite of mine. I have fond memories of my childhood, cooking a lot with rocamadour. It’s a reminder of simpler times and the warmth and comfort that good food can bring. I believe that food has the power to evoke emotions, and this dish certainly does that for me.
Spaetzle and Rocamadour with Jacquère wine
Wine pairing is an essential part of any meal, and I recommend pairing my spaetzle with rocamadour cheese with a white wine from Savoy & Bugey : The Jacquère. The wine’s light body doesn’t overpower the delicacy of this recipe.
Jacquère and Altesse: The Leading Grapes of Savoie
Jacquère, a white grape variety, is known for its prominent presence in the Savoy wine region of France. This variety is primarily used to produce Apremont wines and is a popular pairing with cheese fondue. In addition, it can also be found in Bugey wines. Jacquère and Altesse are the two leading grapes of Savoie, with Jacquère producing still white wines while Altesse is responsible for producing sparkling wines.
The Transportive Taste Profile of Jacquère Wines
One of the standout features of Jacquère wines is their taste profile, which has been described as having a transportive quality, reminiscent of mountain air. With more than half of the plantations in the Savoy region dedicated to Jacquère, it’s easy to see why this grape variety has become so popular.
The Characteristics of Jacquère Wines
Jacquère wines are known for their high acidity, and are often referred to as “mountain fresh” or “alpine clean.” They boast herbaceous aromas, including freshly cut grass, green apples, and pears, which are complemented by tastes of clean fruit, such as apple, pear, and citrus. The tastes are crisp and bright, thanks to the wine’s sappy acidity, but without being overpowered by excessive fruit flavours, perfect for warm weather and outdoor dining.
A Personal Favourite: The Warmth and Joy of Spaetzle and Rocamadour Cheese
My lovely spaetzle with rocamadour cheese is a must-try for anyone looking for an easy pasta recipe with a touch of originality. Its simplicity and comfort make it the perfect dish for any night of the week. And, paired with the gorgeous Jacquère, it transforms into a gourmet experience. So, go ahead, try this pasta dish, and see why it’s a personal favourite of mine.
