APRICOT SALAD WITH ROCAMADOUR

Epicurean farewell: revel in the embrace of summer’s last sunshine with my apricot salad with rocamadour !

Basking in the Radiance

Ah, the apricot! A jewel of the seasons, a burst of sunshine in each bite, and a fruit that beckons with its sweet embrace. It is a seasonal muse I could indulge in all day, appreciating its succulence with every opportunity. As the curtain falls on the holidays, I extend an invitation to enjoy the last taste of summer with a vibrant apricot salad, featuring none other than my beloved Rocamadour cheese obviously!

Rocamadour cheese

Now, let’s turn our attention to Rocamadour, a cheese that holds a special place in my heart. Hailing from my region of Quercy in southwestern France, Rocamadour is a small, creamy delight with a bloomy rind. Its history is steeped in the traditions of monastic cheesemaking, with origins tracing back to the medieval monks who crafted it. This cheese, with its nutty richness and velvety texture, became an inseparable part of my culinary repertoire.

Crafting the Apricot and Rocamadour Salad

As the holiday season bids adieu, I find solace in the kitchen. The apricot and Rocamadour salad emerges as the crescendo, a composition of colours, textures, and flavors that bid a fond adieu to the sunny days of summer. Each slice of Rocamadour, a creamy note, harmonizes with the apricots’ sweetness, creating a tasty culinary melody…

Hautes Côtes de Beaune Joins the Celebration

Enter Hautes Côtes de Beaune, a white wine from the prestigious Burgundy region.

As the sun kisses the vineyards of Côte de Beaune, it bestows upon its grapes a vivacity that defines the region’s white wines. Renowned for their brilliance and an intense gold color that mirrors the radiant landscape, these wines offer a bouquet that dances with the essence of citrus. Each sip becomes a journey through the sun-drenched terroir, where the very soul of the vineyard is encapsulated in the glass.

Diving into the heart of Côte de Beaune, we encounter the magic of terroir : the soil, climate, and topography that shape the character of each vineyard. This region’s terroir possesses the enchanting ability to impart a distinctive taste to the wines it births.

Tropical Fruit and Spice

Delving deeper into the sensory journey, the white wines from Côte de Beaune reveal ripe tropical fruits interlace with the subtle hint of spice.

Central to the allure of Côte de Beaune’s white wines is the Chardonnay grape, a virtuoso performer that achieves unparalleled heights of weight, acidity, and complexity. The microclimates that dot the region contribute to this diversity, allowing Chardonnay to express itself in myriad ways. The result is a collection of wines that boast a graceful equilibrium – a delicate interplay between lively acidity and vibrant fruitiness…

The Last Glimpse of Summer

As I assemble the vibrant ingredients on my plate, I reflect on the moments shared under the sun, the laughter echoing through outdoor gatherings, and the joy found in simple, seasonal pleasures. The apricot and Rocamadour salad becomes a vessel for these memories, a way to savour the essence of the season one last time.

Summer’s salads

You may wish to prolonge a little bit the summer with those succulent salads !
