PISTACHIO CHICKEN CURRY

Easy curry for the connoisseur: impress with pistachio-infused and coconut chicken curry. Lovingly paired with a wine from the Loire Valley.

Pistachio power: chicken curry gets nutty

Pistachios are a versatile and delicious seed that can be incorporated into a variety of dishes, adding a rich and nutty flavour to any recipe. That’s why I’ve decided to share my latest culinary test : a pistachio chicken curry.

This dish is a beautiful blend of the rich and creamy coconut, paired with the subtle sweetness of pistachios. The result is a truly delightful and aromatic curry that is sure to delight your taste buds. I was inspired to create this dish after my daughter made me a pistachio pesto that was truly to die for. It was then that I realized the full potential of pistachios in a curry.

From ancient Persia to your plate: the story of pistachios

In terms of history, pistachios have a long and storied past. They are believed to have originated in the Middle East, and were a staple food in ancient Persia. The seed was also used in traditional Middle Eastern sweets and candies, and they were even a symbol of wealth and prosperity in ancient times.

Sipping on the soul of the Loire Valley: Côtes de Forez

When it comes to wine pairing, I recommend a red wine from the Loire Valley, such as the Côtes de Forez. The full-bodied and slightly spicy notes of the wine complement the creaminess of the curry.

Côtes de Forez is a wine to be savoured and remembered. This elegant red wine comes from the western Loire Valley in France and is made from a single grape variety, Gamay Noir a Jus Blanc.

The Loire Valley is renowned for its wine production, and the Côtes de Forez stands out among the many offerings. While red wines in the middle Loire areas are typically made from Cabernet Franc, other renowned appellations like Chinon, Bourgueil, and St-Nicolas de Bourgueil also produce exceptional red wines.

When it comes to taste, Côtes de Forez does not disappoint. With its light body and low tannins, this wine boasts fresh and vibrant fruit hints. The palate is deep, dense, and velvety, with aromas of ripe black fruits, violets, and morello cherries.
