MIMOLETTE AND CHICORY LEAF SALAD
It is not easy sometimes to know how to cook some kind of French cheese! I had seen some mimolette (which used to be called “Lille bowl”), in my deli so I came with a lovely salad to honour the North of France where it belongs! I could hear you thinking out loud, why the mimolette is actually orange? Because of the annatto it contains, a natural dye that comes from annatto, a tree that grows in tropical regions. But some mimolettes are as well coloured with carotene…
Wine pairing : Ariège (Red) from Languedoc-Roussillon.
Serves 2
60 g diced mimolette cheese
