Dare to impress your family and friends with my easy-peasy and delicious savoury cake with chorizo and onion.
Chorizo and Onion Cake – A Fusion of taste
Indulging in the world of gastronomy often leads us to discover remarkable combinations that transcend mere sustenance. Today, I bring to you a recipe that beautifully marries the robust essence of cooked chorizo, the aromatic onions, and the irresistible charm of cheddar.
The Charm of Cooked Chorizo
I don’t know about you, but I have always found cooked chorizo to possess an ineffable “je ne sais quoi” that surpasses its cold counterpart. Its transformation through cooking reveals a depth of flavors, unravelled by the application of heat. The smoky paprika-infused sausage exudes a richness that adds a touch of warmth to any dish it graces. Especially combined with the sweet, caramelized onions!
A Touch of History
Chorizo, originating from the Iberian Peninsula, has a legacy dating back centuries. Its smoky, piquant qualities have been cherished by Mediterranean cultures for generations. Onions, too, have played a pivotal role in countless culinary traditions, their versatility and ability to add depth to dishes earning them a place of honour in kitchens worldwide.
The Artistry of Côtes du Roussillon Les Aspres
The Côtes du Roussillon Les Aspres, a distinguished red wine hailing from my picturesque region of Languedoc-Roussillon, serves as the perfect accompaniment.
This wine crafted from a masterful blend of Shiraz/Syrah, Grenache, and Mourvèdre grapes, represents the epitome of winemaking artistry. Revealing delicate notes of sweet smoke and ethereal violet.
The Perfect Temperature
To truly appreciate the multifaceted character of Les Aspres, it is essential to serve it at the ideal temperature. The oenophile’s discerning palate will find solace when this wine is gently chilled between 15 and 16°C.
An Olfactory Journey
With an exquisite nose that mesmerizes from the first encounter, Les Aspres entices with ripe red and black fruits in harmony with fragrant herbes de Provence. A subtle whisper of black pepper weaves its way through, adding a touch of intrigue. Without omitting Its aromas of plum, raspberry, blood, iron, espresso, and garrigue Each inhalation of this wine evokes images of sun-soaked vineyards and the intoxicating scents of the Mediterranean.
So, my esteemed gastronomes, enjoy my chorizo and onion savoury cake and the joy it brings (I do hope so), to your palate…
