Cauliflower, the star ingredient in this recipe, is a vegetable with a rich history. It is a member of the Brassica oleracea family, originating from the Mediterranean. Cauliflower is native to the Near East, where it was already harvested more than 2000 years ago (cauliflower was cultivated in Egypt 400 years before our era). Very popular in antiquity by the Greeks and Romans. it fell into oblivion before the Italians introduced it to France and Louis XIV’s gardener, La Quintinie, made it fashionable. In the 17th century, finally, the multiplication of its culture, by sowing, develops. It was thanks to Louis XV that his notoriety was assured. Today, it is a widely beloved vegetable, with China being the largest producer.
Its edible white flesh, sometimes referred to as “curd” due to its appearance, is what makes cauliflower a versatile and flavourful ingredient. Whether roasted, steamed, or fried, this cruciferous vegetable never fails to impress, bringing a touch of elegance to any dish.
