The French Dairy Legacy
Crème fraîche has its roots in the dairy-producing areas of France, including Normandy, Alsace, Franche-Comté, and the northern Loire. It is believed to have originated in Normandy, near Isigny-sur-Mer. The process of making it involves allowing bacteria to acidify the cream, leading to the production of lactic acid from lactose, ultimately resulting in thickened cream. The taste is wonderfully rich, boasting a slightly sour tang and a cultured, nutty undertone.
Today, crème fraîche is crafted in various dairy regions of France, gaining popularity not only there but also in the UK and the US. The term “crème fraîche” has been present in recipes dating back to the eighteenth century, indicating the French have cherished and utilized this creamy creation for quite some time.
