KIEV CHICKEN (Poulet à la Kiev)

Are we going to Ukraine, in Kiev exactly with this recipe ???? No, absolutely not as the Kiev chicken, like its cousin the beef Stroganoff , is not Russian at all! The Kiev chicken is in fact a French dish, which arrived in Russia in the 18th century… invented by the French chef Nicolas François Appert. It seems that it was the Americans who called it “Kiev-style” in the 50s, to certainly attract the attention of Russian emigrants.

Bonne dégustation!

Wine pairing : Buzet(Red) from the South West.

KIEV CHICKEN
Serves 3

3 large chicken breasts
3 beaten eggs
Flour
Panko bread crumbs
100 g 3,52 oz soft salted butter
1 large crushed garlic clove
Half a lemon juice
2 tbsp chopped parsley

Preheat your oven to 200°C.
In a bowl, mash together the butter, garlic, parsley and lemon juice.
Using a sharp knife, cut the chicken breasts in half lengthwise, keeping both halves equal in size and thickness to create a pocket  into the side of each chicken breast.
Careful not to cut through the chicken breast!
Stuff each chicken breast with 1 or 2 tablespoon(s) of Kiev butter.
Pinch the opening to seal.
Dip each chicken in flour, then in eggs and finally dip into the Panko.
Dip once again the chicken into the eggs and Panko.
Place the chicken breasts onto a baking tray.
Put in the oven for 25 minutes.
Serve with lemon wedges on top.
