The Ficelle Picarde: A Savory Twist on the Classic Pancake

Savory pancakes? It might sound like a strange concept, but the ficelle picarde is a dish that is sure to change your mind. This traditional recipe hails from the Picardie region of France, where it is a beloved bistro staple. If you are looking for a delicious and easy lunch option, this dish is definitely worth a try.

What is a ficelle picarde?

Essentially, it is a thin pancake filled with a mixture of sautéed mushrooms, diced ham, and grated emmental cheese. The pancake is then rolled up and baked until golden brown. The result is a gooey and utterly delicious meal that is perfect for any time of day.

One of the things that makes the ficelle picarde such an appealing dish is how easy it is to make. You do not need any fancy equipment or complicated techniques – just a few basic ingredients.

A Brief History of Ficelle Picarde

If you are looking for a bit of history behind the ficelle picarde, you’ll find that it’s a dish with deep roots in the Picardie region. The recipe has been around for decades, if not centuries in the local cuisine. The dish’s name comes from the French word “ficelle,” which means “string,” a reference to the thin, rolled-up pancakes that make up the dish.

Unveiling the Delightful Wines of Côtes d’Auvergne

When it comes to the ficelle picarde, I would recommend a red wine from the Loire Valley – specifically, a Côtes d’Auvergne.

Located in the heart of France, the Côtes d’Auvergne wine region is a hidden gem that boasts of its distinct volcanic terroir and rich history. The region is home to an exclusive variety of wines, including the renowned Côtes d’Auvergne red wine, which is produced from the Gamay and Pinot Noir grapes. In this article, we explore the unique characteristics of Côtes d’Auvergne wines and what makes them so special.

A Tale of Two Grapes: Gamay and Pinot Noir

The red wines of Côtes d’Auvergne are mostly made from the Gamay varietal in combination with Pinot Noir. The two grapes offer different qualities to the wine, with Gamay adding a fruity and floral aroma, while Pinot Noir contributes to the wine’s structure and tannins. There are two different types of red wines: those meant to be enjoyed young and those that can be aged. The latter offers a complex flavour profile that develops over time, while the former is light in weight and early harvested.

Distinctive Characteristics of Côtes d’Auvergne

The vineyards of Côtes d’Auvergne are located along a vast limestone hill, capped with volcanic basalt. The wines from the region are characterized by their fruit, structure, elegance, and finesse. They have an intense red colour, an expressive nose dominated by red fruits and pretty peppery notes, and a gourmet and light palate. These unique characteristics are a result of the vineyards’ location on the extinct volcanic mountains and the terroir made of ash, lava, and basalt deposits.

Exploring the Wines of Côtes d’Auvergne

The Côtes d’Auvergne wine region is a must-visit destination for wine lovers and enthusiasts. The region produces little-known but very fine wines that are a true reflection of the region’s terroir and history. The wines of Côtes d’Auvergne are available in a range of styles and price points, making them accessible to all wine lovers.

So, with a glass of Côtes d’Auvergne in hand, you’ll be all set for a delicious and satisfying ficelles picarde…
