HALLOUMOPITA (MINT AND HALLOUMI CAKE)
We are going to Cyprus today to discover their lovely cake made with Halloumi and mint, but do you know Halloumi? It is a typical Cypriot cheese : a mixture of sheep’s and goat’s milk made with a touch of mint. Like its distant cousin the feta, Halloumi is kept in large jars of salt. In your fridge, it can be kept for up to a year as long as it has not been started. , Halloumi has the particularity of not melting in heat, which offers a multitude of possibilities to consume it : cold or hot, raw, cooked or simply grilled.
