APRICOT WITH ROQUEFORT CREAM
A Perfect Summer Delight for Your Next Gathering
Summer without gathering with friends would not be summer, don’t you think so? There is nothing more enchanting than receiving my friends around the swimming pool at my home in my beloved South of France, enjoying a delicious cocktail or fresh wine, talking lightly, laughing… It is in these moments that we create unforgettable memories that last a lifetime.
The Importance of Aperitif Nibbles in French Culture
As a hostess, I always have a hundred little aperitif nibbles to please everyone. However, there is one dish that never fails to impress and satisfy even the most sophisticated palates: apricots with Roquefort cream. This divine pairing of sweet and salty flavors is the perfect summer delight for your next gathering, and I guarantee that your guests will be asking for more.
Unraveling the Enigma of Roquefort’s Origins
Roquefort cheese, also known as the “king of cheeses,” is a French cheese made from sheep’s milk. It has a distinctive sharp and tangy flavour with a slightly crumbly texture that melts in your mouth.
The elusive genesis of Roquefort, shrouded in a veil of enigmatic legends, presents a challenge to those seeking a definitive account. According to one such fable, the renowned Roman emperor Julius Caesar himself sampled a piquant blue-veined cheese in the vicinity of Saint Affrique, a mere fifteen kilometres from the present-day Roquefort cellars. However, despite the romantic allure of such tales, the historical record offers only scant confirmation of their veracity, with the earliest written reference to Roquefort appearing circa 1070 during the Carolingian era.
Chateau Musar: A Lebanese Winery
To complement this delightful appetizer, I suggest pairing it with a Red Chateau Musar from Lebanon.
Chateau Musar is a Lebanese winery located in Ghazir, Lebanon, and its vineyards are situated in the Beqaa Valley. The winery produces red wines that are blends of Cabernet Sauvignon, Cinsault, Carignan, Grenache, and other carefully selected grapes.
The Wine and Aging Process
The wine is aged for seven years, allowing for a complex, inky-dark appearance and a silky-textured taste. Its profile boasts blackcurrant, raspberry, and cherry jam flavors, with a warm, spicy finish.
The Story of Resilience
The story of Chateau Musar’s survival during the Lebanese civil war of 1975 to 1990 is well documented. The winery was founded by Gaston Hochar and his sons Serge and Ronald in 1930. Decades of winemaking at the domaine culminated in the creation of Chateau Musar Rouge in 1977, crafted by Serge Hochar himself.
Celebrated Excellence
Chateau Musar’s wines have gained international recognition for their unique blend of flavors and dedication to the art of winemaking. The winery’s unwavering commitment to quality, coupled with a rich history of resilience and survival, continues to make Chateau Musar a symbol of Lebanese winemaking excellence.
Hosting a Memorable Gathering
This appetizer never fails to impress. So, the next time you plan a gathering with your loved ones, give these little apricots a try, they are so good they will definitely be linked with summertime moments with your friends…Let it take you on a journey to the South of France, where the sun is always shining, and the food is always delicious.
