The Art of Turning Leftovers into a Savory Ham and Walnut Cake
Sometimes, the most delicious culinary creations are born out of necessity. Especially when my cupboards and fridge offer limited ingredients, it can be challenging to make a meal that satisfies our cravings. However, with a little creativity, it is possible to transform these odds and ends into something amazing!
Like Me you certainly have been in a situation where we find ourselves with a bit of leftover ham, a few walnut kernels, and some cheddar. These ingredients, on their own, may not seem like much. However, when they are combined with flour and eggs, they create a beautiful savoury cake.
The Art of Savoury Cakes
Savoury cakes have been a part of culinary culture for centuries. In medieval times, these cakes were known as “pyes” and were a popular choice for banquets and feasts. These cakes were often filled with a variety of meats, fruits, and spices, and were a base in the diets of the nobility.
Discovering Châtillon en Diois: A Wine Appellation in the Rhone Valley
For this savoury cake, I recommend a Châtillon en Diois Rosé from the Rhone Valley.
Located about 20 miles east of the Rhône river in the Drôme Valley, the Châtillon en Diois wine appellation is a hidden gem in the Rhone Valley. While the northern Rhône is known for its Syrah wines, Châtillon en Diois instead focuses on Burgundian grapes, producing a unique style of rosé wine made from Gamay grapes.
A History Dating Back Over 2,000 Years
The Clairette de Die vineyards, which are located nearby, have a history dating back over 2,000 years. According to local lore, the “ancestral Dioise process” was found accidentally by a Gallic shepherd who was using the cool waters of La Drôme river to chill a bottle of local wine. This method, which involves bottling the wine before it has finished fermenting, results in a natural sparkle and has been used for centuries to produce the famous sparkling wines of the region.
Tasting Notes: Fresh and Harmonious
Châtillon en Diois rosé is fresh and harmonious, with citrus aromas and fruity notes on the palate. The ideal serving temperature for Châtillon en Diois rosé is between 8 and 10°C, allowing the wine to showcase its crisp, refreshing taste.
From Côtes du Bez to Châtillon en Diois
The wines from Châtillon en Diois were previously known as “Côtes du Bez” in the 19th century, but the appellation was officially recognized as Châtillon en Diois in 1975. Since then, the winemakers of Châtillon en Diois have been working hard to produce high-quality, distinctive wines that showcase the unique terroir of the region.
