TAGLIATELLES WITH BURRATA

I have discovered burrata in Italy, Capri, to be precise. The starter was a fresh burrata dip in olive oil with some wild mushrooms and truffles! Heaven for me as you may imagine! Since then, I like to cook with burrata even though calories speaking, it is not the best! But from time to time, I like to indulge myself in those little treats… A classical recipe for me at home now!

Wine pairing : Dolcetto d’Alba (Red) from Piemont.

TAGLIATELLES WITH BURRATA
Serves 4

400 g fresh tagliatelle

400 g tinned chopped tomatoes

A dozen of chopped fresh basil leaves

1 crushed garlic clove

2 burratas

Freshly grated Parmesan

Olive oil

1 tbsp of brown caster sugar

5 cl  cooking water

Fry in a saucepan, the garlic and the tomatoes in a little bit of olive oil.

Add the basil, sugar and leave it to simmer for 10 minutes under a low heat.

Meanwhile, cook the tagliatelle for 4 minutes in a large volume of boiling water.

Once cooked, add them to the saucepan with the cooking water and combine well.

Serve the pasta with half of a burrata per plate.

Sprinkle with parmesan if you wish!

Faites revenir dans une large poêle l’ail et les tomates dans un petit peu d’huile d’olive.
