GALIPETTE DE SAUMUR : MUSHROOM WITH RILLETTE

Galipette is actually the name of a variety of mushrooms. They are rather big, white or brown. The stuffed galipettes are a specialty from the Anjou area in France where it is very popular! Saumur is a town very well know for the Elite “Cadre noir”, a high leveled national and military riding school. For this recipe you can take portebello mushrooms!
Wine pairing : Côtes de Nuit Village (Red) from Burgundy.
