EASY FISH RICE GRATIN

It is so difficult sometimes for us parents to prepare a fish dish for our children! It is why I tried to manage to disguise it under numerous versions ;) This one with rice is a gem : the fish is nicely hidden and believe me, your child or children will ask for a second helping, as mine did, straight away…

Wine pairing : Saint-Mont (White) from the South West.

EASY FISH RICE GRATIN

Serves 3

300 g 10,58 oz of white fish poached and diced
30 g
1,05 oz of butter
30 g 1,05 oz of flour
60 cl 0,28 oz of milk
100 g 3,52 oz freshly grated pecorino cheese
150 g 5,29 oz of basmati rice
1 pinch of nutmeg

Cook the rice for 10 minutes in boiling salted water.
Meanwhile, prepare the béchamel : melt the butter in a little saucepan then add the flour stirring continuously.
Add the milk bit by bit still stirring.
Add progressively half the cheese, the nutmeg then the fish.
Preheat your oven at 180°.
In a lined baking dish, dispose the rice all over.
Pour the fishy béchamel on top of it.
Sprinkle with the remaining cheese.
Put in the oven for 15 minutes.
