COD BRANDADE EXPRESS

I was looking to replicate this recipe from quite a time now when I discovered this marvellous dish at a yummy’s french airport restaurant in the South of France :  a delicious brandade of cod made with a puree. I know how tedious it is to make the real brandade with salted cod, but I was so happy to realise that it was in fact, even better for my taste to do it with a simple cod fillet!

Wine pairing : Porto Vecchio (White) from Corsica.

COD BRANDADE EXPRESS
Serves 4

400 g 14,10 oz cod

500 g 17,63 oz potatoes (Rattes du Touquet for me)

1 bouquet garni

15 cl 5,27 oz warm milk

30 g 1,05 oz butter

2 crushed garlic cloves

1 pinch of nutmeg

Some breadcrumb (Panko for me)

Olive oil

Preheat your oven to 180°C.

Cook the potatoes in boiling salted water for

15 minutes.

Meanwhile, poach the cod with the bouquet garni

then shred it.

Make a puree with the potatoes, butter and nutmeg.

Set aside.

Soften the garlic in a large saucepan with a little

bit of olive oil.

Add the cod, the warm milk then the puree.

Stir until a smooth mixture is achieved.

Pour the brandade in a baking gratin dish and

sprinkle some breadcrumb all over.

Put in the oven for 15 minutes.
