SALMON AND ORANGE BRANDADE
(Brandade de saumon à l’orange)
I have tasted a cod brandade at a restaurant in France this summer while I was feeling a little bit low and it has been to die for! My smile was back on my face and I was happy as a mouse! I tried to recreate it in London but it is difficult to find salted cod!!! But you do know me, I really wanted to recreate a brandade so I came with this recipe with salmon and orange. Not the same obviously but so very good indeed and terribly comforting, just to put a smile back on your face! ;)
Wine pairing : Vézelay (White) from Burgundy.
