EGG CURRY – ANDA MASALA –
Even though we are locked down, I try as much as possible to create a kind of diversity in my recipes! I am lucky enough to find, nearly, what I need to cook. Many thanks to the people behind the shadow who are working endlessly to satisfy all our needs… Because I tend to cook a lot of indian dishes (easy when you are living in London I reckon), I possess a nice cupboard of spices and I am grateful to have plenty of them. Today I am going to cook with eggs as it is something you, normally, find on the shelves even nowadays… You will adore the texture of the eggs paired with lovely spices : an enchanting way of travelling and forgetting for a moment the strange time we are living in…
Wine pairing : Vin de pays d’Argens (Rosé ) from Provence.
