Take a ready to cook, tasty escape with my no-fuss, easy-peasy cod, coconut yogurt, and curry papillote recipe!
Resilience in a Dish
In the midst of these unprecedented times, where cooking exploration intertwines with the constraints of ingredient scarcity, the quest for an easy yet delectable recipe becomes a welcomed challenge. I present a culinary escapade to you today with a cod with coconut yogurt and curry papillote. As we navigate the intricacies of this unique time, the foraging cupboard becomes our ally, and the local fishmonger, our beacon of freshness.
Foraging Cupboards
In a world that currently echoes with the scarcity of certain ingredients, the notion of foraging cupboards takes center stage in our cooking narrative. The challenge lies not only in creating a dish that satiates the palate but also in doing so with readily available staples. London, like many places, faces the echoes of global disruptions, prompting a shift in perspective toward the treasure trove within our own cupboards, where simplicity meets resilience, and resourcefulness reigns supreme.
The Local Fishmonger
In the heart of my adventure stands my local fishmonger, a guardian of freshness and a supplier of the essential protagonist, the cod. However, recognizing the global challenges, a pragmatic approach appears. Should the fishmonger’s corner remain elusive, you are welcome to use frozen white fish, an adaptable alternative, ensuring our culinary voyage remains undeterred.
A Glimpse into History
The cooking method known as en papillote, French for “enclosed in paper,” has a long and rich history. The earliest known reference to en papillote cooking appears in the 17th-century French cookbook, Le Cuisinier François, by François Pierre de La Varenne.
In the 18th century, en papillote gained popularity among European aristocracy, becoming a signature dish in haute cuisine circles. The method was particularly favoured for its ability to preserve food’s natural tastes and juices while creating a moist and tender texture.
The key benefits of cooking en papillote
Moist and tender texture: The enclosed environment of the parchment or foil pouch creates steam, which gently cooks the food without drying it out, resulting in a moist and tender texture.
Easy clean-up: The cooking vessel itself is the serving dish, eliminating the need for additional dishes, making cleanup a breeze.
Sustainable cooking: En papillote utilizes simple and readily available materials, making it a sustainable and environmentally friendly cooking method.
Wine Pairing
The perfect companion for my for cod with coconut yogurt and curry papillote recipe is a white Kaefferkopf Pinot Gris from Alsace.
Kaefferkopf, is a Grand Cru revered for crafting wines of unparalleled quality, particularly the esteemed Pinot Gris. Situated in the village of Ammerschwihr, this vineyard boasts a rich winemaking history, dating back through the annals of time. The essence of Kaefferkopf lies in its unique terroir, defined by sandstone marl.
Pinot Gris
The Pinot Gris wines emanating from Kaefferkopf are heralded for their stunning complexity : a harmonious blend of spices, dry fruit, and a resplendent full-bodied character. Into the glass, expect encountering notes of poached pear, lemon curd, dried papaya, and marmalade. The palate unfolds with hints of melon, honeysuckle, and the comforting yeast-dough. This dry, full-bodied style culminates in a bright, mineral finish, leaving an indelible mark of Kaefferkopf’s signature.
Recognition and Distinction
In January 2007, Kaefferkopf ascended to the pinnacle of recognition, officially adorned with the esteemed Grand Cru status. Joining the ranks of 51 lieux-dits in Alsace, this designation solidifies Kaefferkopf’s position among the elite. Beyond Pinot Gris, the vineyard showcases its versatility with the production of Gewurztraminer and Riesling, often intertwining these varietals to birth distinctive and age-worthy wines.
Roots in 1338: A Landmark in Alsace’s History
Travel back to 1338, a pivotal chapter in the history of Kaefferkopf when its name graced the land register of the Pairis Abbey in Ammerschwihr. Over centuries, Kaefferkopf’s reputation burgeoned, finding mentions in numerous books and theses. In 1931, recognizing the exceptional quality and commercial success of its wines, Ammerschwihr’s vineyard owners took a decisive step, safeguarding the Kaefferkopf name. By 1932, Kaefferkopf achieved the distinction of becoming the first officially recognized and delimited lieu-dit, a trailblazing move that predates the creation of the A.O.C. Alsace Grand Cru appellation by forty years.
Terroir Dynamics and Microclimate Magic
Positioned between the village of Ammerschwihr and neighboring wineries, the Kaefferkopf Grand Cru vineyard enjoys a quintessentially Alsatian microclimate. Characterized by hot, sunny summers and cold winters, this terroir forms the nurturing ground for terraced vineyards. These vineyards, meticulously cultivated, yield wines of the highest quality, with an emphasis on grape varieties like Riesling, Gewurztraminer, and Pinot Gris.
In fine
In a world where scarcity echoes through the aisles, my recipe for cod with coconut yogurt and curry papillote stands as a demonstration to cooking resilience. The recipe arises from the foraged treasures within my cupboards, guided by the freshness of my local fishmonger. It mirrors the adaptability of our culinary spirit during these dreadful times, offering a taste of ingenuity and resourcefulness…
