Discover the Provence with Pissaladière Nissarde

Are you in search of a dish that brings a bit of sunny Provence to your plate? Look no further than the classic French dish, pissaladière. This onion and anchovy pie has become popular worldwide, and for good reason. The combination of sweet caramelized onions (You even may use frozen onions as it saves my time and my tears…)., salty anchovies, and herbs and spices make for a mouth-watering culinary experience.

History of Pissaladière Nissarde

The pissaladière is a traditional dish from the city of Nice obviously. A classic savoury pizza-like tart consisting of a topping of onions, anchovies, olives and herbs on a bread dough base.

The origins of the word pissaladière apparently come from the niçois (the dialect from the Nice region) pissaladiero, which was derived from pissalat (also spelled peis salat), a Provençal condiment made from puréed anchovy and olive oil that is used in the dish.

The pissaladière dish seems to originate from a Genoese recipe, from Imperia (Italy), from the end of the 15th century.

Pissaladière vs. Pichade

It’s essential to note that a Pissaladière from Menton is not the same as a pissaladière nissarde. The dish is called a pichade, and while it contains the same ingredients as a pissaladière, tomatoes are added to the mix. The pichade is an excellent dish in its own right, but for a true taste of traditional pissaladière, stick to the original recipe.

Taste the difference

To complement the pissaladière, I recommend a Condrieu white wine from the Rhône Valley. These wines have a long and illustrious history as they were highly regarded by the Avignon Popes, who were resident in the area in the 16th century. In more recent times, famous epicure Curnonsky was also a fan of these wines. Today, the wines of Condrieu continue to be celebrated for their distinctive aroma.

The Viognier Grape

The Condrieu appellation covers white wines made exclusively from the Viognier grape. This grape variety is known for its distinct aromatic qualities, which include notes of ripe, sweet peaches, orange, honey, pears, apricot, flowers, and citrus. Some examples also have notes of anise, star fruit, and dried fruit.

Aroma Profile

The wine offers a unique aroma profile, which includes ripe, sweet peaches, orange, honey, pears, apricot, flowers, and honeydew melon. They have a fruity taste and medium-bodied mouth feel, which is silky in nature. The wines can provide luscious, and at times, oily textures. Perfume notes of spring flowers, musk, spices, and nuts add to their distinctive character.
