CHANTERELLES OMELETTE WITH GOOSE FAT (Omelette aux chanterelles à la graisse d’oie)
CHANTERELLES OMELETTE WITH GOOSE FAT
(Omelette aux chanterelles à la graisse d’oie)
Quintessentially French, the omelette is normally made with cepes mushrooms but to be honest with you, in full Brexit time, I cannot find any cepes in London. Even my French deli has closed! So I came with chanterelles instead. Between you and I, it is not the same, but I am quite close to the iconic one! Prepare a nice side salad seasoned with shallots, a fresh goat cheese crottin and a dollop of chestnut honey on top of it and you might be near to heaven!
Wine pairing : Bourgueil (Red) from the Loire Valley.
