The Mexican Guacamole: A Recipe Worth Sharing

How strange? I made a few guacamoles during the summer time for my supper with my friends in France and I was really surprised to discover that some of them did not actually have the recipe! In my mind, guacamole was something everyone knows a little bit like the tapenade. But eventually, I was wrong. It is interesting how we can all grow up with certain assumptions about food and its history, but then discover that there is a whole world of cuisine out there we haven’t explored.

The Surprising History of Guacamole

Guacamole has been around for centuries, dating back to the Aztecs who used to make it by mashing avocados with a mortar and pestle. In those times, the dish was called “ahuaca-mulli,” which translates to “avocado sauce” in the Nahuatl language. It was a staple in the Aztec diet, and they often paired it with corn tortillas or tamales. The Spanish Conquistadors later introduced tomatoes, onions, and garlic to the recipe, which added new flavors and depth to the dish.

From Secret Recipe to Global Phenomenon: The Rise of Guacamole

For many years, guacamole remained a well-kept secret in Mexico, but as more and more people travelled to Mexico for vacation, it quickly became a popular appetizer around the world. It is no surprise that I have asked Martha, a Mexican woman who is at my aquagym class, to share her guacamole recipe with me. It is a dish that she takes great pride in, and rightfully so. Her recipe is a traditional one, passed down from her mother, and it uses simple ingredients that are easily accessible.

Discovering the Fruity and Refreshing Palette Rosé from Corsica

When it comes to pairing guacamole with wine, there are a few things to keep in mind. First, you want to choose a wine that will not overpower the dish. A light-bodied rosé, such as Palette from Corsica, is a great choice.

The magnificent Corsica, is known for producing some of the finest and most underrated Rosé wines in the country.

The Palette Rosé is made primarily from the sciaccarellu grape, a local variety that produces full-flavored and aromatic wines. Its intense bouquet of white peaches, plums, rose, and white pepper undertones is balanced with a rich and mineral palate.

The Fruits of Corsica’s Winemaking Tradition

Corsica’s long history of winemaking dates to 570 BC when the ancient Greeks first settled on the island. Over time, the island’s vineyards have flourished, producing wines that rival some of France’s most renowned appellations. Despite this, Corsica’s wines remain relatively unknown outside of the country, making them a hidden treasure for wine enthusiasts and connoisseurs.
