FETA AND MINT CAKE
Discover a new twist on the classic savoury cake with the unique combination of feta, mint, green olives, and cherry tomatoes.
A Light and Refreshing Cake for Spring
This feta and mint cake is the epitome of a light and refreshing cake. With the use of almond milk and ingredients like mint, feta, green olives, and cherry tomatoes, this cake is as light as a feather. It is the perfect cake for spring, with vibrant colours that will surely make your plate look more appealing.
A Cake with a Mediterranean Twist
This cake has a Mediterranean twist, with its use of feta, green olives, and cherry tomatoes. I bake it quite a lot when in London to have a little bit of a Mediterranean vibes to some very grey days! Feta cheese has been a staple in Mediterranean cuisine for centuries, with its crumbly texture and tangy hint adding a unique touch to any dish. Mint, on the other hand, has been used since ancient times in Greece and Rome for its medicinal properties. The combination of these ingredients in a cake is a delightful surprise for the taste buds.
The History of Almond Milk
Almond milk has become a popular alternative to dairy milk in recent years, but did you know that it has been around for centuries? In fact, almond milk was used in medieval kitchens as a replacement for dairy milk during fasting periods.
A Cake that Will Win Over Your Friends
Be warned, if you serve this feta and mint cake to your friends, you may have to bake it each time you visit them afterwards. Its unique combination of flavors and light texture will win over even the pickiest eaters.
The Terroir of Saint-Guilhem-le-Désert
The perfect meal is not complete without a great wine pairing, and this feta and mint cake is no exception. A Saint-Guilhem-le-Désert rosé wine from Languedoc-Roussillon would complement this cake perfectly. Even more as my holiday house is just 45 minutes away by car from this magnificent village!
At the foot of the Larzac plateau and the Cévennes Mountains, lies the IGP title of Saint-Guilhem-le-Désert. The region boasts a unique and characteristic climate that heavily influences the vineyards. Most of the vineyards in the area are located between 100 and 150 meters above sea level, resulting in wines that reflect the terroir.
The Palate-Pleasing Characteristics of Saint-Guilhem-le-Désert
This wine is a true testament to the region’s quality production. Its pastel colour is just a prelude to the magnificent bouquet that awaits. The wine opens with a delicate floral scent of rose petal, balsamic, and wax, followed by a hint of raspberry blossom honey. On the palate, the wine boasts a bold and corpulent character, almost viscous, but perfectly balanced. It has a powerful extract filling, ripe acidity, and a long finish, leaving you with a memorable taste experience.
A Tourist Destination with a Rich History
Saint-Guilhem-le-Désert is not only known for its exceptional wine but is also a sought-after tourist destination. This charming village has retained its medieval personality, making it one of the most beautiful villages in France. History plays a significant role in both the development of the vineyards and tourism in the region. The abbey, dating back to the 9th century, was instrumental in the vineyard’s development, and visitors can still see the remnants of this historical landmark.
My Personal Experience in Saint-Guilhem-le-Désert
I have the pleasure of visiting the village several times a year and dining at the same restaurant, which has become a tradition for me. The combination of the exquisite wine, the charming village, and the beautiful walk around the Hérault river through the “pont du diable“, are something that I am always looking forward to…
