AUTHENTIC CHERRY CLAFOUTIS
Are you ready to experience the rustic charm and sophistication of a true French and easy-peasy cherry clafoutis?
An Authentic Cherry Clafoutis: A Quintessential French Delight
As a French woman, I have always been captivated by the delicate and sophisticated flavours of my country’s traditional dishes. And when it comes to desserts, the cherry clafoutis is definitely one that I like to prepare. This cake, made with non-pitted cherries, is quintessentially French and comes from the Limousin area in the South-West, just near my hometown.
The Importance of Non-Pitted Cherries
It may seem strange to some, but the fact that the cherries in a clafoutis are not pitted is actually very important. The stones give a special taste to the dish that would be bland without them. The tradition of using non-pitted cherries in clafoutis goes back centuries, and it is said that it adds a depth of aroma that cannot be achieved otherwise.
The Origins of Clafoutis
The name “clafoutis” comes from the Occitan language, which is spoken in the South-West of France. In Occitan, “clafir” means “filling”, which is fitting as the cake is filled with cherries. The dish originated and dating back to at least the mid-1800s in the Limousin area of France, where it was typically served as a dessert after a hearty meal.
Serving Tradition of Clafoutis
One interesting tradition surrounding clafoutis is the way it is served. Unlike most cakes, clafoutis is typically served directly from the mould. This not only adds to the rustic charm of the dish but also ensures that the cake retains its shape and texture. And of course, it should be served warm, straight from the oven.
