APPLE, ROCAMADOUR AND SALTED CARAMEL PIE

I cannot remember when, where or how I had this idea of putting some Rocamadour crottins with salted caramel together in a pie? It might came from my daughter. Sometimes she has strange ideas like this. I am not sure really. Or maybe Mister P. who appeared to have a little bit the same adventurous choice in the dishes he sells…  The only thing I can perfectly remember is this “I have NEVER ever TASTED this pie!!!” Why ? Oh, this is simple : as soon as this tarte arrives at the table in any buffet I organized, it disappeared instantly. Once I even thought that maybe I did not bake it at all. Maybe I was dreaming… So you have been warned, this pie is a weapon, a terrible weapon of mass seduction…
If you cannot find Rocamadour, go for any dry goat cheese !!
Obviously, buy apple compote and/or salted caramel if you don’t have the time to prepare them…
