CHICKEN WITH MIRABELLE
Mirabelle plum (a plum first) is a small yellow-orange flesh native from Lorraine (Eastern of France). In Lorraine they used Mirabelles absolutely anywhere : in alcohol, in pie, in jam, canned, in syrup, in cooking… I found some at my market and bought nearly all of them so don’t go now (just kidding…). I didn’t want to cook them in a dessert as I did the greengage pie last time (here). So I cooked them with chicken. A marvel… If you cannot find them (or don’t want to), you can use any plums… It will be our secret…
Wine pairing : Languedoc Sommières (Red) from Languedoc-Roussillon.
