Inspiration for a Delicious Salade Niçoise
Recreating the authentic salade Niçoise is a great way to bring a little bit of my beloved country to your plate. This recipe, given to me by my Niçoises friends Agathe and Sophie, is inspired by the renowned restaurant in Nice, the African Queen. It’s easy to make, and it’s perfect for sunny days when you want a light and refreshing meal.
A Brief History of the Salade Niçoise
But, before we get into the recipe, let’s talk a little bit about the history of the iconic dish. The salad originated in Nice, and the first recorded description of its recipe was in 1894. The salad’s essential preparation was codified by Auguste Escoffier, the chef and encyclopedist who gathered up two and a half centuries of French culinary knowledge into his “Guide Culinaire”.
Stick to Tradition
Over time, the recipe evolved, and today there are as many variations of the Salade Niçoise as there are families in Nice. Some people believe that the salad should only include certain ingredients, while others are more flexible. But, one thing is for sure, if you want to make an authentic Salade Niçoise, you have to stick to the traditional ingredients.

These delicate aromas are perfectly balanced by the fragrant notes of summer flowers, white tea, and Provence herbs. Unveiling the Unique Terroir of Bandol
The terroir in Bandol is unlike any other, with its deep limestone soils and ideal Mediterranean climate. The grapes are all handpicked, ensuring the utmost care in the winemaking process. At least 20% of the grapes must be Mourvèdre, which adds depth and complexity to the wine. To guarantee ripeness and focus, yields are limited to 40, resulting in wines that are rich in character.

The wines of Bandol were exported to many countries and were supported by the port of Bandol. Today, the Bandol AOC appellation is a symbol of the region’s key wines, having been given official recognition in 1941.
Uncovering the Viticultural Tradition in Bandol
The viticultural tradition in Bandol is rooted in history, going back to the fifth century before our era when the Phoceens settled the Taurois colony.
