CHESTNUT AND CÈPE SOUP
The smell of this soup is wonderful all around the kitchen. The chestnuts (as you may know it by now) are my “péché mignon”. I had some cèpes from France in a jar I wanted to use. It was so cold outside that a soup came to my mind almost immediately… In addition, I bought a couple of days ago my favorite French brand of chestnuts at my supermarket. The equation for this soup was simple : cèpes, chestnuts, garlic and parsley. Hum, so yummy. Obviously if you don’t have cèpes, use shiitake (or any other mushrooms really) instead…
Wine pairing : Bourgogne Aligoté (White) from Burgundy.
