TAGLIOLINI AL LIMONE – RICETTA DI CAPRI
Feeling inspired? Why not try making my delicious and easy-peasy tagliolini al limone and bring a taste of Capri to your home?
Tagliolini al Limone from Capri: A Taste of the Dolce Vita
Like the ancient Roman emperor Tiberius, who retreated to the island of Capri to escape the stresses of ruling an empire, I too yearn for an escape from the pressures of modern life. In Tiberius’ time, Capri was a place of retreat and rejuvenation, and for me, it remains a haven of relaxation and culinary delight. And it was during my visit to Capri a couple of years ago that I discovered a dish that embodied the island’s essence: Tagliolini al Limone.
Recreating the Magic: My Attempt at Making Tagliolini al Limone
The dish I tried to recreate is from the magnificent restaurant Da Paolino, a restaurant known for its use of lemons in every dish. The little story behind Da Paolino’s lemon obsession is that the grandmother of the restaurant’s owner had invented the famous Limoncello. The restaurant is nestled in a beautiful lemon grove where you can hear the rustling of the leaves and smell the citrusy aroma. I do really advise you to book a table and to enjoy every minute of it!
Capri’s Culinary Scene
As I enjoyed each bite of my tagliolini al limone, I was transported to a world of sunshine, sea, and the sweet life that is the epitome of Capri. The dish is a simple : flat noodles, and a sauce made from lemons, cream, and butter. The acidity of the lemon perfectly balances the cream and butter.
Bit by bit, with each mouthful of this pasta dish, I could hear the little waves I craved so much in Tiberius bath. And, like Tiberius, I too found a renewed sense of youthfulness and vitality during my time in Capri.
A Taste of Calabria: Lamezia Greco White Wine
I knew I needed the perfect wine to complement my tagliolini al limone. The Lamezia Greco, a white wine from Calabria, proved to be the ideal pairing.
Made predominantly from the Greco Bianco grape variety (85-100%), this wine allows for the addition of non-aromatic green grapes (0-20%) to create a unique blend.
Characteristics of Lamezia Greco
The resulting wine boasts an intense straw-yellow hue, with an appealing and characteristic fragrance that is both fresh and invigorating. On the palate, it is dry, fresh, and harmonious, with a perfect balance of acidity and sweetness.
Lamezia is best consumed young, allowing for its fresh and fruity flavors to be enjoyed to the fullest.
This wine has a clear light yellow-green straw colour, with melon, pear, citrus, and tropical fruit notes on the nose. Its well-balanced acidity and subtle sweetness make it a perfect companion for any meal, or simply enjoyed on its own as a refreshing aperitif.
So, if you wish to embodies the essence of the island: indulgence, relaxation, and culinary delight, my pasta dish of tagliolini al lemone is a perfect reminder of the beauty and simplicity of life…
