MELON, FIGS, RAW GARDEN PEAS AND CASHEW NUTS SALAD (Salade de melon, figues, petits-pois et noix de cajou)
It’s very easy now to find shoots in supermarkets. Years ago you had to go to special organic places to find them! I wanted to articulate a salad around lentil peas and bean shoots and a lovely Charentais melon with its orange flesh came to my mind… To be fair, they are not as sweet and gorgeous as they are in the South of France but it was just what I wanted for my salad… About the color, I took lovely garden peas and figs, it suited nicely the strange weather we encountered now in London, definitely autumnal… Go for a Cantaloupe melon if you cannot find any Charentais one and for dry figs if you cannot find some fresh!
