PAPAYA, CAULIFLOWER RICE, GRAPES AND BRIE SALAD (Salade de papaye, Brie, riz de chou-fleur cru et raisins)
I used to eat only Raw. I used to follow “the eating way of life” of Matthew Kenney and Sarma Melngailis. It was not a quick kind of cooking, oh no. It was not subsonic cooking either. It was a long way to the top to be able to eat something. Nights to soak the nuts, half a day in the dehydrator (Excalibur) and so on. The day I could have killed for a steak I knew that something was wrong. I gave up and listened to my body. A steak, ok, a steak. A juicy avocado as a snack, ok, a juicy avocado then. And so on. And now I am happy. Happy to eat raw sometimes. Happy to eat meat as well. This salad is exquisite. The dry apricots with the papaya are a very good match. The raw cauliflower and the grapes, a perfect combination. And the Brie of course for the French touch!
